Ginseng Energy Balls

Ingredients:
- 1 cup rolled oats
- 1/2 cup pitted dates
- 1/4 cup mixed nuts (e.g., almonds, walnuts)
- 1 teaspoon ginseng powder (open capsules to get powder)
- 2 tablespoons honey
- 1/4 cup shredded coconut (optional, for coating)

Directions:
- Combine oats, dates, nuts, ginseng powder, and honey in a food processor. Blend until the mixture is sticky and holds together.
- Roll into small balls, and coat with shredded coconut if desired.
- Refrigerate for at least 30 minutes before eating.
