Ginseng Chicken Soup

Ingredients:
- 1 whole chicken, cut into pieces
- 1 ginseng root (fresh or dried)
- 4-5 garlic cloves, peeled
- 4 dried jujube dates
- 1/4 cup rice (optional, for a thicker soup)
- 8 cups water
- Salt and pepper to taste

Directions:
- In a large pot, add the chicken, ginseng root, garlic, dates, and water.
- Bring to a boil, then reduce heat and simmer for about 2 hours.
- If using rice, add during the last 30 minutes.
- Season with salt and pepper to taste before serving.
