Ginseng Chicken Soup

  • Ingredients:
    • 1 whole chicken, cut into pieces
    • 1 ginseng root (fresh or dried)
    • 4-5 garlic cloves, peeled
    • 4 dried jujube dates
    • 1/4 cup rice (optional, for a thicker soup)
    • 8 cups water
    • Salt and pepper to taste
  • Directions:
    1. In a large pot, add the chicken, ginseng root, garlic, dates, and water.
    2. Bring to a boil, then reduce heat and simmer for about 2 hours.
    3. If using rice, add during the last 30 minutes.
    4. Season with salt and pepper to taste before serving.
